Is notebook a valid format for the final submission for project 2, or are we required to use solely standard scripts for submission? Functions that are shared are written in standard scripts, but the main file to run the project code and present the results is contained in notebooks.

yes notebooks are a good format, and definitely allowed.
also helps with documenting your code and making it reproducible.
