I was wondering for this part when we are asked to simulate the epidemic multiple times starting from randomly chosen selected source nodes wether we have to remove a new bucket of edges each time we launch a new simulation ?

Good question!

We want to avoid both lucky (random) edge removal and a lucky (random) source node. Therefore it is a good idea to average over both multiple random edge removals and random source nodes.

Note that in the next exercise (2.11), since there will be (strategic, not random) edge removal, only averaging over multiple (random) source nodes is sufficient.
